Vermicelli Pulao is a very popular, tasty, healthy and nutritious Breakfast Recipe in many Indian Houses. I mostly make this pulao with vegetables like peas, carrots and beans. This is a good option for Kids tiffin box. It is light on stomach and tastes wonderful. Today I am sharing a basic breakfast recipe just cooked with onions, tomatoes, peas and carrot. You can add coconut and cashews as well. This is favorite breakfast recipe at our home.

- 1 cup Vermicelli
- 1 onion, finely chopped
- 1 Carrot, cut into small cubes
- 1/4 cup Green Peas
- 1 tomato, pureed
- 1/4 teaspoon Mustard Seeds
- 1/4 teaspoon cumin powder
- 6-7 Curry Leaves
- 1-2 green chilies
- Red Chili powder
- 2 teaspoon lemon juice
- 1 teaspoon sugar
- Salt to taste
Method to make Vegetable Semiya (Vermicelli) Pulao
Step 1: Put 1 teaspoon oil or ghee in a pan and dry roast the vermicelli. Remove and keep aside.
Step 2: In the same pan, add oil and mustard seeds. When they splutter, add onions, curry leaves and green chilies. Saute them for 2-3 minutes and then add red chili powder.
Step 3: Add tomatoes, peas, carrots, cumin powder,and stir fry for 2 minutes. Add roasted vermicelli, salt, and sugar and mix well.
Step 4: Pour 1/2 cup water and cook it for 5-6 minutes on low flame. Add lemon juice and stir fry the sevai for 1-2 minute.
Step 5: Turn off the heat when the sevai is cooked. Garnish it with fresh mint (pudina) leaves and serve hot with milk or tea for breakfast.
