Himachali Style Sukhi Urad Dal Recipe or Dhotwi Dal- A dry urad dal preparation cooked in whole garam masala with desi ghee.
This North Indian dry lentil dish is made without adding onion and garlic. This is my mom’s recipe and is loved by everyone at our home. Even ginger and tomato is not added to the dish. The use of whole garam masalas and desi ghee gives it an authentic and distinct flavour and aroma. This delicious dish from the snow chapped mountains of himachal will surely tingle your taste buds. - 1 cup black split urad dal Chilka
- 3-4 tablespoon desi ghee
- 4 green cardamom
- 4-5 cloves
- 1 inch cinnamon stick
- 1 bay leaf
- 1 inch Javitri (Mace)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon fennel seeds powder
- 1/4 teaspoon red chili powder
- Asafoetida- a pinch
- Salt to taste
- 1/2 teaspoon sugar
Method to make Himachali Style Sukhi Urad Dal Recipe or Dhotwi Dal
Step 1: Soak black split urad dal chilka in sufficient water for 7-8 hours. Soaking in water will help to peel off the skin easily. Then, rub it number of times with both the hands.
Step 2: Pour 1 cup of water over it. This makes the chilka or skin to float. Drain all the chilka and keep the urad dal aside.
Step 3: Heat ghee in a pressure cooker, keep the flame to low. Add crushed green cardamom, cloves, cinnamon, bay leaf, javitri and asafoetida.
Step 4: Add turmeric powder, fennel seeds powder, red chili powder and salt.
Step 5: Add washed urad dal and mix well. Season it with little sugar and stir it for 3-4 minutes.
Step 6: Add 1/4th cup of water and pressure cook it on low flame for 2 whistles.
Step 7: Once the pressure is released, open the lid and check the urad dal. Dal should be cooked well and separated.
Step 8: Serve hot with rice, rotis or paratha.
