Mumbai Style Pav Bhaji Recipe
Mixed vegetables are cooked, mashed and spiced with a blend. It is one of the popular street food in Maharashtra. Served with soft bread buns tossed in butter. Smooth and mashed texture of vegetables spiced in Pav Bhaji Masala gives it a beautiful aroma and mouth-watering taste. It is the best way to include vegetables in your kid’s meal. They love to have it with joy. The vegetables which I have used in Pav Bhaji are cauliflower, carrots, beetroot, peas, green capsicum and potatoes. Beetroot is optional, I have used beetroot as it gives rich colour to the dish and sweeter taste.

- 1/2 cup cauliflower, cut into florets
- 3/4 cup fresh peas
- 2 medium potatoes, peeled and cubed
- 1/2 cup carrot, peeled and chopped
- 1/2 cup chopped capsicum
- 3/4 cup chopped beetroot
- 1 large onion, finely chopped
- 2 teaspoon ginger garlic paste
- 2 tomatoes, pureed
- 2 green chilies
- 1 teaspoon red chili powder
- 1 teaspoon mustard seeds
- ½ teaspoon cumin powder
- 1 ½ teaspoon Pav Bhaji Masala
- Asafoetida- a pinch (optional)
- 1 teaspoon lemon juice
- Salt to taste
- 2 tablespoon oil
- 2 teaspoon butter
- Fresh Coriander Leaves for garnishing
Directions to make Pav Bhaji Recipe:
Step 1: Clean and wash all the vegetables in a running water and cut them into small pieces.
Step 2: Put all the vegetables in a pressure cooker, pour 1/2 cup of water and salt to taste. Close the lid and cook for 2 whistles. Turn off the heat and let the pressure release naturally.
Step 3: Transfer the boiled veggies in a plate, let them cool and then mash gently with a masher or with a hand.
Step 4: Heat oil in a pan, add mustard seeds and asafoetida. When they start to splutter, add onions, ginger garlic paste and green chilies. Saute till it turns transparent.
Step 5: Add tomato puree, red chili powder, pav bhaji masala and salt. Stir fry till all the masala are cooked well. Then, add mashed vegetables and mix well.
Step 6: Add 1 teaspoon lemon juice and butter and cook for another 4-5 minutes. Check for salt, if required add more.
Step 7: Now, Bhaji is ready. Turn off the flame, transfer it into a serving bowl and garnish with fresh coriander leaves.
Step 8: For Pav buns, cut it into halves. Heat the tava, put a teaspoon of butter and place the buns over it. Flip both sides till it turns light brown and crispy.
Step 9: Serve hot with onions, green chili and lemon.
