Pani Puri is a famous and mouth watering Indian street snack that is loved by everyone. It is a small round shaped crispy puris, filled with spicy, sweet and sour tamarind water. In Maharastra, it is known as Pani Puri, Golgappa in Punjab and Uttar Pradesh, Puchka in West Bengal and Gupchup in Odisha. Below is the Pani Puri Recipe with step by step instructions.
What is Pani Puri?
- Pani means water and puri is fried crispy hollow dough ball. The pani is sour, spicy, sweet and tangy made with the addition of tamarind chutney.
- Sweet chutney is known as meetha pani and the spicy water is called as teekha pani. Both meetha and teekha pani are added in the puri along with boiled potatoes, cooked chickpeas, onions and fresh coriander leaves.

Pani Puri | Gol Gappa | Puchka Recipe

Ingredients
- Semolina- 2 cup
- Wheat Flour- 1 cup
- Water as required
- Baking Soda- ½ teaspoon
- Refined Oil
- Cumin Powder- 3
- Black Salt- 1 tablespoon
- Jaggery- 4 tablespoon
- Chickpeas- Boiled, 1 cup
- Tamarind Paste- 1 cup
- Mint Leaves- 1 cup
- Boondi- 2 tablespoon
- Boiled and Mashed Potatoes- 4
- Black Pepper as required
Method to make Pani Puri | Gol Gappa | Puchka Recipe
For making Pani Puri
Step 1: Take a large bowl, put semolina, baking soda and little bit of salt. Mix all the ingredients and prepare stiff dough. Then, cover it with a cloth and leave it aside for 30 mintues.
Step 2: Make small sized balls from the dough and place them on flat surface. Pour some wheat flour over them, flatten them thin enough and give round shape like rotis.
Step 3: Heat oil in a pan and fry these round shaped puris on medium flame. Rotate these puris 3-4 times so that each one of them puffs well.
Step 4: Once puffed, take them out and place them on paper tissue so as to drain extra oil.
For making pani for pani puri
Step 1: Take blender, put mint leaves, coriander leaves, green chillies and blend them to a smooth paste.
Step 2: Transfer this paste into a jug and add tamarind paste, 3 cups of water, black salt, jaggery, cumin powder and boondi. Mix all the ingredients well.
Step 3: Keep the mixture in the refrigerator to cool.
For making Pani Puri Stuffing
Step 1: For the stuffing of puris, take a bowl, put mashed potato along with chickpeas. Add chat masala according to your taste.
Making Pani Puri
Step 1: Take the puris and crack the top of the puri with a spoon or using your thumb. Stuff the potato-chickpeas mixture in the puris.
Step 2: Stir the chilled green mint pani and fill it in the puri. You can also add some sweet chutney in the puri (optional).
