Turai Ki Sabzi| Ridge Gourd Sabzi|How to make Turai Ki Sabzi
Turai is a very healthy vegetable and rich in nutrients. Because of its neutral tasting, it is hated and considered boring by many. This is a north Indian recipe cooked in onion tomato masala with spices. This soggy vegetable absorbs the flavours and turns out to be a delicious side or main dish. This is quick, easy recipe to make at home and is light on stomach. Best to serve with fresh rotis or phulkas.

Ingredients
- Turai/ Rigde Gourd- 4 medium size
- Potato- 1 medium size
- 1 onion finely chopped
- 1 tomato pureed
- Ginger Garlic paste- ½ teaspoon
- 1/2 teaspoon cumin seeds
- 1/4 fenugreek powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 teaspoon Olive oil for cooking
Note: As Ridge Gourd is bland in taste, so salt the gravy properly.
Method:
Step 1: Wash and peel the ridge gourd. Cut the top and bottom edges.
Step 2: Cut the turai into small cubes or circular shape. Peel off the potato and cut it into small dices.
Step 3: Heat oil in a pan and add cumin seeds. When the seeds crackle, add onions, ginger garlic paste and sauté till they turn golden brown.
Step 4: Add tomato puree, turmeric powder, coriander powder, red chilli powder, fenugreek powder, salt and sauté for 1 minute on medium flame.
Step 5: Put potatoes and stir fry for 1 minute. Add turai, garam masala and mix well.
Step 6: Cover the lid and cook for 8-10 minutes, till the ridge gourd is cooked. Keep stirring in between.
Step 7: Garnish with coriander leaves and serve hot with phulkas.
