Aloo Palak Curry Recipe
There are many ways of preparing this recipe- one is dry version (without gravy) and another is with gravy. Here is one delicious version with gravy. In this recipe the spinach is pureed, not being chopped. The recipe which I am sharing today is made with No onion, No garlic and No tomatoes. You can cook it with the use of onions, ginger, garlic and tomatoes as well.
This is my mom’s recipe, very simple and I love to have it with steamed rice. Just give it a try! Fresh spinach is pureed and then fried potatoes are cooked in this spinach mixture with spices.

Aloo Palak Curry
Prep Time: 20-25 minutes
Cook Time: 15-20 minutes
Servings: 4
Ingredients
- 200 gms or 1 bunch of Palak (Spinach)
- 3 medium sized Aloo (Potato)
- 2 Green chilies
- 1 teaspoon ginger paste
- 3-4 Cloves
- 1 inch cinnamon stick (dalchini)
- 3-4 Green Cardamom (Elaichi)
- 1 Bay Leaf (Tej Patta)
- 4-5 Black Pepper
- 1/2 teaspoon fennel powder
- ½ teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- ½ teaspoon degi mirch
- 1 pinch asafetida (hing)
- ½ teaspoon garam masala
- 1 teaspoon kasuri methi (dry fenugreek leaves)
- 1/2 cup whisked yogurt
- Salt to taste
- 2 teaspoon olive oil
Method to make Aloo Palak Curry Recipe:
Step 1: Wash the spinach well in running water and blend it with green chilies to make a smooth puree.
Step 2: Cut the potatoes in medium size dices. Heat oil in kadai or pan and deep fry the potatoes in oil. Keep aside them in a plate.
Step 3: Heat olive oil or ghee in a pan and add bay leaf, green elaichi, cloves, cinnamon stick, black pepper, fennel powder, cumin seeds and ginger paste. Stir fry on low flame till they become aromatic.
Step 4: Add palak puree and mix well. Now add turmeric powder, degi mirch, hing, coriander powder, salt to taste and stir well for 10-15 seconds.
Step 5: Add whisked yougurt to the palak puree and mix well. . Keep the flame at low and stir it vigorously to prevent the curd from breaking.
Step 6: Simmer the palak gravy till it gets completely cooked and start separating oil. The gravy will thicken, so you can adjust the consistency by adding some water.
Step 7: Add fried potatoes and stir them in palak gravy for 5-6 minutes. Sprinkle kasuri methi and garam masala over it. Cook for another 5-6 minutes.
Step 8: Serve it hot with steamed rice, roti or parantha.
