Besan Karela Pakoda | Bitter Gourd Chips
Karela Pakoda is a nice evening snack and is loved by me and my family. Due to the bitter taste, Karela or Bitter Gourd is one of the most hated vegetable. But this recipe which I am sharing today will make you start liking bitter gourd too. It is a very healthy vegetable, boosts immunity and is good for diabetic patients. It is nice idea to include this vegetable in your diet. I love Karela due to its health benefits but lot of people avoid eating it. This crispy Karela Pakoda recipe is so delicious that you will surely like it.

Ingredients
- Bitter Gourd/ Karela- 3 medium sized
- Besan Flour- 1/2 cup
- 1 Onion, finely sliced
- Jeera- 1/2 teaspoon
- Haldi- 1/2 teaspoon
- Asafoetida (Hing)- A pinch
- Green chilli- 2 finely chopped
- Coriander powder- 1/2 teaspoon
- Dried Amchur powder- 1 teaspoon
- Salt to taste
- Carom Seeds (Ajwain)- 1/2 teaspoon
- Oil for deep frying
Method to make Bitter Gourd Chips/Karela Pakoda Recipe:
Step 1: Wash and clean the Karela with water and cut into halves. Discard the seeds and cut into slices.
Step 2: Sprinkle some salt over it and mix well. Rest it for half an hour. You will notice some bitter water left out from karela. Squeeze out the water and keep the squeezed bitter gourd in a bowl.
Step 3: Add gram flour, salt. Jeera, coriander powder, carom seeds, turmeric powder, hing, sliced onions, green chilies in a bowl and mix well. Add little water and mix to form a thick batter.
Step 4: Add squeezed bitter gourd slices to the batter and mix well.
Step 5: Heat oil in kadai and deep fry in hot oil till it turns golden and crispy. Transfer in on the tissue paper so that extra oil gets absorbed.
Step 6: Sprinkle chaat masala and lemon.
Step 7: Serve hot with a cup of chai.
