This dry Aloo Parwal Recipe is a popular Bengali dish, known as Potol in Bengal. The vegetable is full of nutrients, minerals and vitamins. It looks like pointed gourd with tapering ends and is light green in color. This recipe is easy to cook and can be served in lunch or dinner with rotis.
This Aloo Parwal Sabzi Recipe is prepared in the same way any other dry sabzi recipe with potatoes like Aloo Gobi, Aloo Beans and Aloo capsicum. The recipe is delicious and don’t take much time to prepare.

Ingredients For Parwal Recipe
- Parwal- 250 gms
- Potatoes- 2 medium sized
- Onion- 1, finely chopped
- Ginger-Garlic Paste- 2 Teaspoon
- Tomato- 1 Pureed
- Cumin Seeds – ½ teaspoon
- Asafoetida (hing)- A pinch
- Turmeric Powder- ¼ teaspoon
- Red Chilli Powder- ¼ teaspoon
- Coriander Powder- ½ teaspoon
- Fenugreek Seeds- ¼ teaspoon
- Green Chilli- 1, finely chopped
- Garam Masala- ¼ teaspoon
- Amchur Powder- ½ teaspoon
- Salt as required
- Cooking oil- 2 tablespoon
Method to make Aloo Parwal Recipe
Step 1: Wash the parwal well in water. Then, peel off the skin and cut the both ends of parwal. Slice the parwal into long thin three/ four parts.
Note- If the parwal has large and hard seeds in the center then remove it along with the pith. If the seeds are tiny, then there is no need to remove seeds.
Step 2: Wash, peel and cut the potatoes into medium size pieces. Chop onions, make ginger garlic paste and tomato puree.
Step 3: Take a pan and heat oil. Add cumin seeds, asafoetida and fenugreek seeds. Let the seeds splutter.
Step 4: Add the chopped onions and fry till they turn transparent. Then, put ginger garlic paste and sauté till the raw smell goes away.
Step 5: Now add potatoes, green chillies and sauté for a minute. Put turmeric powder, red chilli powder, coriander powder, salt and mix well.
Step 6: Add sliced parwal and sauté for a minute. Next, add tomato puree and mix well.
Step 7: Sprinkle little water over it and cover the pan. Cook the vegetable till it becomes soft. Pour garam masala, amchur powder and little sugar. Mix well and sauté it for another 2 minutes.
Step 8: Serve this Aloo Parwal Sabzi hot with phulkas or as a side dish with dal rice.
