Aloo Palak Methi Ki Sabzi | Spinach Methi Potato Sabzi | A Healthy Vegetable make with Fresh Greens
A nutritious home-made delicious recipe made with basic spice powders. This dish is a great source of iron, vitamins and minerals. You can add carrots in this recipe as well. Ingredients
- 1 bunch Palak (Spinach), cleaned and finely chopped
- 1 bunch fresh Methi (Fenugreek) leaves, cleaned and chopped
- 2 medium sized potatoes
- 1 large onion, finely chopped
- 1 teaspoon, ginger paste
- 5-6 garlic cloves, chrushed
- 1 dry red chili
- 1 teaspoon cumin seeds
- 1/4 teaspoon fenugreek seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Asafoetida- a pinch
- 1 teaspoon garam masala
- Salt to taste
- Mustard Oil for cooking
Steps on How to make Aloo Palak Methi Ki Sabzi
Step 1: Clean, wash and finely chopped palak and methi leaves. Chop onions, garlic and ginger. Peel and cut the potatoes into cubes and keep aside.
Step 2: Heat oil in a kadai, add cumin seeds, fenugreek seeds, dry red chili and asafoetida. When they crackle, add garlic and saute for a minute. Then, add ginger paste and stir for another 1 minute.
Step 3: Add chopped onions and saute till they turn golden brown. Put potatoes and stir fry.
Step 4: Then, add turmeric powder, coriander powder, red chili powder and salt and mix well. Add chopped spinach and fenugreek leaves and stir for 4-5 minutes.
Step 5: Cover the lid and let it cook till the vegetables become soft. Open the cover, add a teaspoon sugar and let it simmer for another 3-4 minutes. Check for salt and adjust it as per your taste.
Step 6: Sabzi is ready. Serve it hot with rotis.
